Domaine J.Laurens “La Rose No.7”, Crémant de Limoux NV

Undoubtedly a very pretty fizz, this Crémant from acclaimed producer J. Laurens has real structure and elegance.  You'd be forgiven for thinking the Languedoc is no place cool climate varieties like Pinot Noir and Chardonnay but Limoux's unique position blesses it with cool Atlantic winds.  The "vent cers" slows ripening and ensures acidity is retained while giving the grapes time to fully develop their complex flavours. This beautifully balanced wine shows pronounced strawberry and delicate soft stone fruit aromas coupled with a long, biscuity finish. ABV 12%
