Domaine de la Roche Honneur “Cuvée de Pâques”, Chinon, Loire

With a little air this characterful Cabernet Franc opens up to reveal ripe blackberry and elegant herbal flavours.  The palate is crunchy and bright and there is a lovely freshness to the finish.  Winemaker Stéphane uses only natural yeasts and keeps sulphites to an absolute minimum.  Fermentation takes place in modern concrete vats which help to retain freshness without imparting secondary flavours. ABV 12.5%
