Domaine J.Laurens Le Moulin, Blanquette de Limoux

From the small town of Limoux in the eastern Pyrenean foothills, this traditional Blanquette shows great typicity with bright apple and honey on the nose and a delicately nutty finish.  It is bone-dry with a tight and finely textured mousse. "Blanquette" is the local name for the region's indigenous Mauzac grape.  Unlike Crémant de Limoux, Blanquette de Limoux must contain at least 90% Mauzac with the rest comprising Chardonnay and/or Chenin.  Traditional method production is mandatory and the wines must spend at least 9 months on the lees.
